Cumin Roasted Carrots Recipe with Yogurt and Charred Edges

Method

Do not leave loose seeds in empty oily corners, where they can blacken before the carrots release moisture. Toss the seeds onto the vegetables or pull stray ones back with a heatproof spatula.

Ground cumin remains a valid fallback, but add it after the first 18 minutes. That shorter exposure prevents the powder from tasting dusty and bitter by the time the centers soften.
